Blueberry Muffins



 Ingredients:

2 c flour
4 ts baking powder
1/2 ts salt
1/2 c caster sugar
100 gr melted butter
1 c milk
1 egg
1 1/4 c blueberries

Method:

First we preheat the oven to 220 c.
Then we sifted the flour in a large bowel the we added the baking powder, salt and caster sugar in it. After that we melted the butter in small bowel in MW for 1 minute. we put the milk and egg in other bowel and added the melted butter in it and mixed them well. then we added this on flour, baking powder, salt and caster sugar and then we added the blueberries in it and mixed them but not over mix.
After that we brushed the muffin tray with butter and put the 12 medium muffin tins in it then we placed the mixed ingredients in to it.
Baked it for 20 minutes but we should not let it to overcook or under cook. it should have nice colour not too dark and not too light.
When it cooked we let it to get cold for 10 minutes.

lemon or orange syrup cakes




   Ingredients:

125 gr soft butter
3/4 c sugar
grated rind of 1 lemon or orange
1 egg
2 T orange
1 1/2 c flour
1/2 c milk
1/2 t baking soda
1/2 baking powder

Syrup ingredients:
1 orange thinly sliced
1 c sugar
1 c water

  Quality of ingredients:

For checking the quality of ingredients we should check the date and its expiry. And for orange juice the orange should be fresh and good colour.

  Method:

First we preheat the oven to 175 C and let it get warm. Then we melted the butter and brushed the tray with melted butter for cake.
After that we soften the butter in microwave and put it in a bowel then we added the sugar and mixed them well to become fluffy after that we added the egg in to it and mixed them.
Then we took other small bowel and placed the baking powder and baking soda in it and we added the milk in it and mixed. after mixing them we added the orange juice and flour and mixed them with mixture then we put that in the bowel off egg, sugar and butter.
Then we put the mixed ingredients in the moulds and we baked it for 20 minutes.
After 20 minutes we checked it if it's cooked or not. we put a knife in to cake for checking it's cooked or not and if the knife was clean and had no liquid on it it's cooked and the colour of the cake mast be light not too light and not too dark.
We left the cake for 10 minutes to get cold after that we sliced that to pieces and placed that in a plate.

Method of making Syrup:

We sliced the orange into thin slices. After that we added the water and sugar in a small saucepan and dissolved the sugar over a moderate heat and boiled them for 10 minutes.
After 10 minutes we added the syrup on top of cake.

Easy Chicken Pad Thai




   Ingredients:

  1: 200 gr thin Thai style rice noodles
  2: 1 cup raw chicken breast or thigh meat, sliced
  4 tsp garlic, minced
  1 spring (green) onions, sliced
  fresh coriander
  1/2 cup chicken stock
  1/4 tsp freshly ground black pepper
 
  Marinade for chicken:

  3 Tbsp tamarind paste dissolved in 1/4 cup warm water
  2 Tbsp fish sauce
  1-3 tsp sweet chilli sauce
  3 Tbsp brown sugar
  
 Quality of ingredients:

For checking the quality of noodles first we should check the expiry date. And for quality of chicken first we should check the expiry date and after that the smell, that it should not have bad smell and also colour is important for checking of chicken quality.

Method:

 First we put some water in a pot and put that on stove when it was boiling we placed the noodles in it and we left it for 10 minutes to cook well.
In this 10 minutes we made the pad Thai sauce by mixing the sauce ingredients together in a bowel. and mixed them till it dissolved.
After that we took the chicken and cut them to small pieces and put them in a bowel. after that we put 2 tbs oil and garlic in pan over medium - high heat and fried half of an onion for 1 minute then we added the chicken and marinade in it and fried them well.
After 10 minutes we turned off the stove for noodles and we drained and rinsed through with cold water and placed that in a bowel.
When chicken was near to fry we added few Tbs chicken stock and we kept adding till 8 to 10 minutes to chicken pieces cooked.
After that we added the pad Thai sauce over the noodles and we used two wooden spoons and mixed them well.
After mixing the noodles and Pad Thai sauce we added them in chicken pan and fried them for 1 to 2 minutes. After 2 minutes we put the meal in bowels and added some green onion on top of it.








Chocolate Brownie




Ingredients:

250 g unsalted butter, melted
125 g (1 cup) cocoa powder
500 g (2 cups) caster sugar
1 1/2 tsp vanilla essence
5 eggs
100 g (3/4) plain flour
1 tsp baking powder
100 g chocolate buttons

Method:
First we preheat the oven to 180 C.
Then  we melted the butter then place that in a large bowel after that we added the cocoa powder and mixed it well then we put the caster sugar and vanilla in it and mixed it well after that we added the eggs. then we blend it together until smooth and creamy.
Then we added the flour and baking powder again we mixed it well.

After that we took the tray and put the baking paper in it then we added the mixed ingredients in it and added the melted chocolate buttons after that we placed that in oven and bake that for 40 minutes.
After 40 minutes we checked if it is cooked or not. For checking that if its over cooked or under cooked we had a look on its colour and we took a knife and put that in cake and when we brought it out it was clean and it had not any chocolate on it and we understood that its cooked.

Then we cut it to small pieces and placed that in to a plate.

chelsea bun



      Chelsea Bun.

      Ingredients:

1. 2 cup self raising flour
2. 1/4 t salt
3. 30 gr butter
4. 160 ml milk
5. 30 gr melted butter
6. 1,5 t cinnamon
7. 3 T brown sugar

      Quality of ingredients:

 For checking the quality of ingredients, for those that have date we should check the expiry date.
And also we can check their smell and appearance.

      Method.

First we preheat the oven to 200 c because it should get hot till our ingredients get ready.
After that we put the flour and salt in a bowel then mixed them and then we added the milk and some butter and mixed them well to change to a dough.

Then we roll the dough until it gets to a large shape and thin. Then we mixed the brown sugar with cinnamon well. after that we brushed  the dough with melted butter and put the mixed sugar and cinnamon on it then we rolled it and cut to 12 pieces. And brushed the cake tin with remaining melted butter then place them in to the cake tin then we put it in oven and cooked it for 20 to 25 minutes.

For checking if its cooked or not we checked its colour and we put a knife in to it and if the knife come out clean without dough its cooked but if the knife has some dough in it its not cooked .

Thai Pollock curry with egg noodles

 


     Ingredients.

1. 400 g Pollock
2. 200 ml coconut milk
3. 250 ml fish stock
4. one tbs brown sugar
5. one tbs Thai fish sauce
6. 2 tbs Thai red curry
7. 200 gr egg noodles
8. one limes
9. one small onion

     Method.

First we were checking the quality of ingredients like, fish should be fresh and for checking the quality of fish we should check its smell, colour and softness.
And for checking the quality of other ingredients also we should check the smell and colour and also their expiry date.

 Then we took a frying pan and put some oil in it and put that on stove when the onion fried we added the fish stock and mixed them well then added the Thai red curry, coconut milk brown sugar and mixed them and wait till it boils after that we cut the fish to small pieces and added them to the curry and waited till it cooked.

For checking if its cooked or not we should check its softness and stiffness like for checking the fish we pushed a knife in it and if the knife goes easily in to it its cooked but if not it does not cooked.

  After that we put a pot on the stove and the water in it when water boiled we put the egg noodles in it and waited 12 to 15 minutes till it cooked well. When noodles cooked we spilled its water and put the noodles in two bowel and add the curry in it and add little lemon juice in it and we put a leave of coriander on each bowel to have nice presentation.



Eggs Benedict




    Ingredients.

1. 4 eggs
2. water
3. oil
4. bread
5. pork
6. spinach

    Method.

   First we washed the eggs and put some water in a pot to boil then we cut the spinach to small pieces.
 After that we took a piece of food saver plastic bag and put it in a bowel then brush it with small amount of oil then added the egg without their cover and knitted the plastic and put in the boiled water in the pot. we did this method for one other egg.
    For two other egg we just put them in the boiled water without their cover. and we waited about 3 to 4 minutes till it cooked.
   while the egg was cooking we fried the pork in a pan with little oil when it fried well we put the spinach on four pieces of bread and also we put the pork on bread and when the eggs cooked we took them out and put them on breads.
  for presentation we put them in plates with sauce.


Vegetable Baskets

 


       Ingredients.

  1. 50 gr butter
  2. pastry sheets
  3. oil or melted butter
  4. 300 gr assorted vegetables: carrot, broccoli, mushrooms, onions and potato.
  5. 1/4 c cheese
  6. Milk
  7. salt and pepper

     
    Equipment.

1. Muffin tray
2. pastry brush
3. wooden board
4. knife
5. microwave dish
6. measuring cup
7. spoon
8. pot
9. basket
10. measuring cup
 
      Method.

   First we turned on the oven to 200 c. and we melted the butter in a microwave cup. Then we add some water in a pot and waited till it boils. and we cut the vegetables in small pieces and put the vegetables in a basket then we put the basket on top of the boiled water in the pot. and waited till it cooked.

   After that we brush the muffin pans with melted butter. Then we brush the pastry sheets with melted butter and cut them in to medium pieces and we put the pastry sheets in the muffin tray.

   Then we added the vegetables in to the tray. we mixed the milk, cheese and melted butter together.
    After that we add it on the vegetables then put it in the oven and bake for 20 minutes at 200 c.

vanilla poached pears



      Ingredients.

      1. Two brown pears
      2. Lemon juice
      3. 2 cups sugar
      4. 6 cups water
      5.  Vanilla

     Method.
 
   First we peeled both pears and add 6 cups water in a pot and we waited till it boils. when water boiled we added the sugar when it dissolved in water we added the vanilla and wait till it boils after that we put the pears in to pot to cook well and become soft for 15 to 20 minutes.
    When it cooked we took it out of the pot and put it in a plate and we added some mixed water, sugar and vanilla on it.

Prawn stir fry

 

     Ingredients:

 1.prawn (10)
 2.Rice
 3.cauliflower
 4.broccoli
 6.oil
 7.mushrooms
 8. bell pepper


     Method 

  First I sliced the cauliflower, broccoli, mushrooms and bell pepper to small pieces and put them in to a bowel. Than I cooked the rice in a pot with water.
Than I fried the prawns well with little oil and when they cooked I put them in to other plate.






 After that I fried the vegetables and added some sweet chili sauce and mixed them well. when they cooked I put them in to  a plate and added the rice beside that.

Cauliflower pakoras with tamarind raita


   Ingredients:

1.Flour (chickpea flour)
2.Baking powder.
3.Ground cumin.
4.Ground coriander.
5.Ground turmeric.
6.Salt and Pepper.
7.Cauliflower
8.broccoli
9. Water

   Method:


For the raita first we mixed all the ingredients together.
We cut the cauliflower and broccoli to small pieces and put them in to other plate.
We put the flour, baking powder, ground spices and salt inn to lard bowel and mixed them and we added  some water to mix the flour with other ingredients.
After mixing well we mixed the cauliflower and broccoli with batter and fried them in to oil. for frying pakoras we need 1 cm oil in pan.

  To know if it is cooked or not we are going to check the color and softness. it should have bight brown color.

Beef Schnitzel



Ingredients:

1.Beef
2.Flour
3.salt and pepper
4.oil
5.Bread crumbs
6.boiled potatoes
7.egg

Method:
 
 First we made the boiled potatoes to small circles and fried them like chips.
 We mixed the bread crumbs with flour and salt and pepper and some coriander in a bowel and sliced the meat to medium pieces and put in the bread crumbs and other ingredients and put them in egg after that we fried them in a pan that had 2 cm oil in it. we made sure ourselves that it cooked well buy checking the color and  softness and smell.

And for salad we needed tomatoes, onions, coriander.
 we sliced them into small pieces and put on the cooked lamb.

     --Prawns should be clean and fresh.
     --Washing vegetables, prepare the ingredients and dishes.

     --We can check if it is cooked or not by its colour and appearance.

    --We can understand that if its cooked by touching, smelling, and looking.

   --We can use beautiful dishes and  use some sauces to decor our dish and food to make it more visually appealing.

Spinach and Ricotta roll

Ingredients:

  • 250 gr ricotta
  • 100 gr baby spinach
  • 1 egg
  • 2 sheets of puff pastry
  • 1 tea spoon nutmeg
  • salt and pepper



Quality of ingredients:
    All  ingredients should have expiry date and should be fresh.

Instruction:
     first we washed the spinach and cut them to small pieces and we put it in another dish. Then we add the ricotta, nutmeg some salt and pepper and mixed them well. And we cut the sheets of pastry in two equal pieces then add some egg on sheets with brush and add the spinach and ricotta in one side of the sheet then rolled that and again add some egg by brush on it. and cut them to three pieces and put that in oven for 30 minutes after 30 minutes it was cooked and ready for eating.

Task requirements

Define the following pastries and give examples.

_Flaky: flaky pastry is a layered pastry dough similar to puff pastry but it contains less fat and fewer layers. Flaky pastry is used to make Pasties, turnovers,sausage rolls, and plaints.

_Laminated: laminated dough is a culinary preparation consisting of many thin layers of dough separated by butter, that we can make it by rolling and folding.

_Choux: it is kind of pastry that is light and we can make it with egg, and it needs only butter, water, flour and eggs. Instead of raising agent,it employes high moisture content to create steam during cooking to puff the pastry.

_Crumbly: when a pastry is cold and hard to roll is called crumbly, and we should be care full about the measurement of the ingredients.

Identify the following terms:

Docking: to dock a pastry means to prick a pie crust with a fork before baking.
Knocking up:it means to press the pastry well if it needs.
Blind baking:is a process of baking pastry without the filling.

Finishing techniques:
 _Filling: to spill all mixed ingredients in one dish.
_Glazing:in pastry is often sweet glazes that we can use it on pastries with brush or we can spill that on cakes or cookies.
_Icing: mostly formed into shapes like leaves or flowers that we can use it on top of cakes.
_Dusting:to put one more layer on food or cake with sugar, honey or chocolates.

     MY OWN DESIGN

                                                     Afghani SHEER PIRA:

 Ingredients:
440 gr (2,5 cups) milk powder
440 gr (2 cups) sugar
500 ml (2 cups) water
1 tbsp ground cardamom
some chopped walnuts
some pistachios
some melted butter
 Instruction:

  1. first we put the sugar in a pan and add the water in it, then leave them to boil for 18 minutes then we spill it in a cup, from 2 cups water and 2 cups sugar should remain one and half cup  syrup. then again we put the syrup in pan and add 1 tbsp rose water after boiling this we add the milk and mix them well after that we add cardamom powder and some nuts and mix them well.
  2. add some melted butter with brush in a pan then drop the mixed ingredients in it and again add some chopped walnuts and pistachios and put that in freezer for an hour.
  3. at the end slice them well and it is ready to eat.
